Keto Pizza Bagels

Course Breakfast
Prep Time 20 minutes
Cook Time 15 minutes
Total Time 35 minutes
Servings 8 Bagles

Ingredients

Bagels

  • 1 3/4 cups almond flour
  • 1 tsbp baking powder
  • 2 oz cream cheese
  • 3 cups shredded mozzarella cheese
  • 3 large eggs one is reserved for egg wash

Topping

  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup pepperoni
  • 1 tbsp Italian seasoning

Instructions

Bagels

  • Preheat oven to 400F 
  • Line two baking sheets with parchment paper or silicone baking sheets 
  • In a small bowl, whisk together almond flour and baking powder
  • Add mozzarella and cream cheese to a large microwave-safe bowl. Melt in the microwave at full power in 30 second intervals. After each 30 seconds stir cheese until it is completely melted. 
  • Mix cheese, 2 eggs, and almond flour mixture in a bowl until the dough is uniform. The dough will be sticky. 
  • Lightly coat your hands with oil and divide the dough into 8 equal parts. 
  • Roll each dough into ropes about 1 inch thick. Form the rope into a circle and pinch the ends shut. Place each circle onto your baking sheet. The bagels should be about 2 inches apart. 
  • Add the final egg to a bowl and whisk. Brush each bagel with the egg wash. 
  • Sprinkle each bagel with mozzarella cheese and top with pepperoni
  • Place bagels in the oven for 14-15 minutes in the middle rack of your oven, or until the bagels are golden brown. 
  • Allow bagels to cool on cooling rack before severing and ENJOY! 

Notes

Store bagels covered in refrigerator for up to one week. The can be toasted for extra crispness.

Ingredients

  • 2 teaspoons ginger powder
  • 1 garlic clove minced
  • 1/2 teaspoon Arrowroot powder
  • 1/8 teaspoon red pepper flakes
  • 1/2 cup Swerve Sugar
  • 1/2 cup Soy Sauce

Instructions

  • Whisk all ingredients together in a small sauce pan.
  • Heat on the stove at medium heat for about 2-5 minutes or until thickened.
  • Let the sauce completely cool.
  • Store in refrigerator for up to two weeks.

Halloween 2018 verse 2017 me.

10 months ago, I wasn’t doing good. I was doing quite bad actually. I never complained to anyone about it, but my friends knew. You ask how did they know? Lets see…I couldn’t touch the ground from a standing position…I would have to lay down to get stuff off the floor……then I had to take 2 breaks in a 1/4 mile walk on a road that was going up hill. My friends waited patiently for me to catch up. Then on the way back to the truck after we got to the top, they ran ahead to get it for me. I was 452 lbs that day…

They didn’t complain, but they knew. I also would sweat standing still…..I didn’t know how to get out of this situation I was in. I was doing bad… it wasn’t good. Both of those friends had tried to help me. One by bringing me to the gym, but being 452 lbs, it was just too much for me to do it consistently without being in more pain than I was and not in a good way. The other decided to make me dinner…then made me dinner the second night…the third night decided to tell me this is what Keto is… I didn’t even know he had to lose weight, because he was in decent shape, but for him he had goals he wanted to hit which were not like mine, but still the same….That was PAPA KETO…That week changed my current life. I am so grateful. I tell him he has probably saved my life many times. I do get a little emotional because I didn’t know how to change on my own. I am grateful for my other friend for trying but I haven’t made it back to the gym yet. Although I did start DDP Yoga and walking.

Back to the dinners…these happened at the Keto Ma’s house. During these meals we became a Keto Fam…and started the Keto Compound which is a place to do our meals and this was the best thing to ever happen to me as far as my weight control goes. Having them to do this with is what made it possible for me to stick with it at the beginning. I had tried WW and other low carb/ low sugar plans…but they never worked. Keto isn’t a diet for me, but a life style change and knowing I have alternatives for foods is something I never realized existed. Having people to share the meals with and to share recipes with is what made this work so well. As well as sharing experiences with alternative foods, such as alternative flours* and alternative sugars*…which makes this all possible. I only knew about diet pops, and pink and blue packets of fake sugar…with no clue there was better, other options out there.

One other friend was also an inspiration, which she gave me goals to hit and I am so grateful I hit them.

There are so many friends and family who have supported me over the years, but until Keto, I wasn’t able to stick with anything. I no longer have the cravings…I no longer cheat AT ALL on my foods. I have no desire. When I want something sweet, I make Fluff…when we need more sweet, we make cookies or cheese cake.

Now I have people asking me questions, and telling me I’m an inspiration to them and the reason they have started. So I realize that other people need this same sort of support system, and a place to go. So that is what Keto Eatables is all about. A resource with the info we have figured out that works for us, and to help people. We are not medical advisors, but just people that want to tell you our experiences.

If you are wondering how I am doing so far…I am 336 lbs today. Thats 116 lbs down so far. I just visited someone who is closer than anyone to me and pushes me to do better even though I haven’t always done so in a timely manner, and we went on a 3.5 mile walk and I didn’t have to take any breaks!!! AND AND AND I can bend down and touch the ground from a standing position with no more sweating.
